Garlic, chilli and ginger form the base of many Chinese dishes, alongside rice, noodles, vegetables, meat, fish and soy sauce. Traditional dishes are often influenced by a variety of different regional styles – the 4 main ones being Cantonese, Szechuan, Shanghainese and Beijing. Many dishes require a wok to cook the food and meal times are often very sociable with many smaller dishes being shared.
